Wondering what to have for breakfast? Why not “Breakfast Cheese”, from the Marin Cheese Company? That, plus much more — including the creamy, citrusy lemongrass-wrapped Grassias, from Paula Lambert’s Mozzarella Company, was offered at the American Cheese Society “Breakfast of Champions” at the Rally in Raleigh. A wide array of yogurts, cultured products such as Kefir, butters, and fresh unripened cheeses were on offer for conference attendees to enjoy before starting their morning sessions, many of them winners from the awards ceremony the evening before.
